Our Story
bills Surry Hills is part of a global restaurant family established by Australian restaurateur, cook, and food writer Bill Granger. He opened his first restaurant in Sydney's Darlinghurst in 1993, followed by the Surry Hills location in 1996. Known for its fresh, beautiful dishes and a welcoming atmosphere, bills quickly became a favorite among locals and travelers alike.
Bill Granger's approach to food was relaxed and joyful, capturing the energy of Australia's great light and big skies. His passion for making people happy is evident in every dish, cup of coffee, and welcoming greeting at bills.
